South Beach - Phase 2 recipe
WHOLESOME OAT MUFFINS
3/4 C + 2 T oats (NOT quick oats!)
1 c buttermilk
1 1/4 C whole wheat flour
1 1/2 t baking powder
1 1/2 t baking soda
1/4-3/4 t cinnamon (I tend to use 3/4-1 t)
1/4 t salt
2/3 C chopped walnuts (optional for extra protein)
1/3 C canola oil
1 egg, beaten
1/3 C brown sugar substitute (South Beach is a low-no sugar plan)
1 t vanilla
* Preheat oven to 425 degrees. Coat a 12-cup nonstick muffin pan with spray, or line with baking cups.
* In a small bowl, combine 3/4 cups of the oats and the buttermilk. Let soak for 30 minutes.
* In a large bowl, stir together the oil, egg, brown sugar subst., and vanilla until well blended. Add all dry ingredients and combine. Then add the oat mixture and stir until just combined. Do not overmix.
* Divide batter evenly among the prepared muffin cups, filling them about 2/3 full. Sprinkle the remaining oats over the muffins. Bake for 11-15 minutes, or until a wooden toothpick comes out clean. Cool on a rack for 5 minutes. Then remove to rack and cool completely.
ENJOY!
*make a double batch to freeze 1/2 for later
